Breaded Eggplant
PREPARING THE BREADED EGGPLANT
Beat the eggs lightly. Pour the mixture of breadcrumbs and cheese in a plate. Slice the eggplant and soak them one by one in the egg (s) and roll in the breadcrumb mixture. Press the mixture lightly into the slices with a fork, just enough to make sure this coat is uniform. Lay each slice in aluminum foil until you are done. Spray both sides well with olive oil.
In regular oven: bake them at 350 until they are golden and crispy, then turn them over.
In the BBQ grill: same process but at low heat.
SAUCE
Sautee the chopped onions and garlic in the olive oil, add the tomatoes and cook for about 3 or 4 minutes. Pour on the breaded eggplant right before serving. Bom apetite!
