Rice à la Grecque, is a dish that goes well with beef, chicken, fish, shrimps, and vegetarians can have the Rice à la Grecque solo. It is very practical because you have many vegetables in one dish. The Rice à la Grecque is colorful and enhances the looks of any table.

INGREDIENTS

1  ½ cups of Basmati rice

3 cups of boiling water

½ cup of olive oil

½ cup of chopped onions

1 tbsp of garlic

½ cup of chopped carrots

1 tbsp chopped red bell pepper

1 cup of sliced fresh mushrooms

½ cup of raisins

½ cup frozen peas

½ cup frozen corn

½ cup of walnuts

½ cup of chopped parsley and chives

2 tbsp of parmesan cheese

PREPARING YOUR RICE À LA GRECQUE

Caramelize the onions and the garlic in the olive oil. Add the rice and the carrots, and sauté for 1 or 2 minutes. Add 3 cups of boiling water. Put the lid on and cook for about 10 minutes. Add the mushrooms and the raisins and cook for another 4 minutes. Add the peas,  corn, and the bell pepper, and cook for about another 4 minutes or until rice is cooked. Add more water, if necessary, carefully, so you do not overcook  your Rice à la Grecque.
