Rolled Oats Muffins
A low-carb gluten-free Rolled Oats Muffin, Fruit, and Cafe Latte are enough for breakfast and to keep me going all morning. Fast, simple, and easy, you can bake a batch of six because they reheat well in the microwave.
INGREDIENTS
1 cup of rolled oats
1/2 cup of orange juice
1 tbsp of coconut oil
1 egg
1 or 2 bananas
1 tbsp of sugar or honey
Salt
Optional: raspberries, blueberries and fresh ginger, orange zest
1/3 cup of walnuts
PREPARING ROLLED OATS MUFFINS
Preheat oven to 400 F.
Mix all ingredients together.
Pour in a silicone muffin pan.
Bake for about 25 minutes or until golden-brown.
